1) Brine to keep it moist. Make a brine for your turkey to sit in for 8-16 hours in the fridge. Include 1 cup of kosher salt, 1/2 cup of light brown sugar, 1 tsp of allspice, and 1 tsp of sage. Brining also gives the skin that beautiful color.

2) Let it sit before it goes in the oven. To reduce the chill, a 20-lb bird should come out of the fridge about 2 hours before you cook it. This helps your turkey cook evenly.

3) Break out the baster. When roasting start out the oven at 425 degrees. Then, after 30 minutes, turn it down to 325 degrees. You should be basting every 10 minutes. use lots of herbs and butter under the skin to keep it flavorful.

4) Achieve the kindest cut. let the turkey rest for 20 minutes after it comes out of the oven. This gives the turkey juices time to be reabsorbed, and it makes the meat that much easier to slice.
